Make the potato juice yourself

These are there to protect the plants from natural enemies. The main alkaloid in the potato is solanine and this is toxic to humans. This substance inhibits the enzymes that are important for the function of the nervous system. In addition, solanine can destroy the cell membrane and this can have a negative effect on the intestinal permeability.

Most solanine is found in and under the shell and especially in potato tubers, which have green spots and bruises. This means that by generous peeling the potato is almost free of solanine. However, a person weighing 60 kg would have to eat about 800 grams of potatoes (potatoes with an average solinin content of 75 mg per kilogram) unpeeled to be poisoned. 800 grams are equivalent to about nine medium-sized potatoes - an amount that is very rarely eaten at one go. If potatoes taste bitter or just funny, you should not eat them anymore, because solanine can also change the taste.
