Food poisoning can have different causes

There are generally different causes of food poisoning: "On the one hand, it is possible that certain microorganisms have changed the food so that toxins have formed," writes the hkk health insurance on its website. "On the other hand, it happens that certain bacteria are in the food, which multiply in the digestive tract - and cause complaints there," it continues. Forgo raw milk

Bill Marler, a food safety specialist, reports on foods he never eats on his Food Poison Journal portal, which would increase the risk of food poisoning.

The Seattle attorney consistently refrains from using raw milk because unpasteurized milk can be contaminated with bacteria, viruses and parasites.

The German Federal Institute for Risk Assessment (BfR) has also stated in a statement that consuming untreated milk can lead to serious illnesses.

The experts advise consumers to cook raw milk before consumption.

Even from packaged juices Marler holds nothing. In one of his first cases as a lawyer, there were food infections with Escherichia coli caused by unpasteurised apple juice.

Pathogens in raw sprouts

Raw sprouts are also not on the table at Marler.

As the lawyer writes, uncooked or slightly cooked sprouts in the US have been associated with more than 30 bacterial outbreaks (mainly Salmonella and E. coli) since the mid-1990s.

All types of sprouts can spread infections caused by bacterial contamination of their seeds.

"There were too many outbreaks to ignore the risk of sprout contamination," says Marler. "These are products that I simply do not eat at all." He added that he eats them when cooked.

Heat meat properly

According to the expert, no raw meat should be eaten.

"If not thoroughly heated to 160 degrees Fahrenheit (70 degrees Celsius), it can cause poisoning by E. coli and Salmonella and other bacterial diseases."

However, he would decide in good restaurants for a steak, which was only "medium" fried.

Listeria in pre-cut fruits and vegetables

Pre-washed or pre-cut fruit and vegetables avoids Marler claims to "like the plague".

The more a food is processed and processed, the more likely it is that it becomes contaminated.

The lawyer buys unwashed, uncut goods in small quantities and eats them within three to four days to reduce the risk of Listeria.

Listeria (Listeria monocytogenes) may trigger a so-called "listeriosis" in humans. The disorder can cause symptoms such as vomiting, muscle aches, diarrhea and fever.

Salmonella outbreaks due to eggs

Raw and uncooked eggs have led to numerous salmonella outbreaks in the US over the past few decades and are therefore being left aside by Marler.

Again and again in this country is pointed to impending Salmonella infections by eggs.

"I think the risk of egg contamination with salmonella is much lower today than it was 20 years ago, but I still eat my eggs well," says Marler.

Raw oysters and shellfish

There are more raw foods that the lawyer rejects: oysters and shellfish.

According to Marler, raw shellfish - especially oysters - have been causing more and more food poisoning lately.

The increase has to do with the warmer waters that produce more microbial growth.

Oysters "absorb everything that is in the water," explains Marler. "If bacteria are in the water, it gets into their system, and if you eat them, you could be in trouble."
