For the health That belongs under no circumstances on the own grill!
Grill friends know that: Regularly comes up the question of which meat is well suited for the charcoal or gas grill or which better should not be used. (Image: Sauerlandpics / fotolia.com)
The answer is relatively simple: Cooked or smoked foods are not suitable for barbecuing. Cured meat, such as kaiser, wiener sausage, meat sausages or Leberkäse, contains nitrite pickling salt, which contributes to color retention and ensures aroma. This salt can react at high temperatures with protein in the food to nitrosamines. These substances are considered carcinogenic. Alternatively, you can put roast or grill sausages on the grid. They are made without pickling salt.
Even smoked foods are not suitable for the grill. As a rule, the incense process already contains combustion pollutants from the smoke (eg organochlorine compounds such as PCB). Your salary would increase even further by barbecuing.
For grilling are generally pieces of meat that are easily traversed with fat. These include z. Pork steak or fillet, beef steaks from the hips, torso or loin, chicken thighs or turkey breasts. If you like lamb, you can also grill chop, club and shoulder. Dr. Claudia Müller, pm
