Carrots and carrots are still among the most popular year-round vegetables in Germany. However, carrots lose their sweet aroma in the cold and get an almost soapy taste, as the press office „German fruits and vegetables“ currently announced in Bonn.
Carrots are especially healthy because of their carotene content
Carrots are particularly valuable for nutrition because of their high carotene content. As a precursor (provitamin) of vitamin A, carotene has a very positive effect on vision and blood purification and can also be helpful in cardiovascular disorders and stomach ailments. The carrot is the vegetable with by far the highest carotene content and is exceeded in the animal sector only by cod liver oil and beef liver. In addition, carrots are relatively popular with children due to their sweet and sweet aroma, and can be used as a side dish for both savory and sweet dishes. The popular winter vegetables taste raw shredded, seasoned with lemon juice and sugar, as well as cooked, stewed, blanched, pickled, squeezed as a cake or juice. Carrots can be excellently combined with many other vegetables such as peas, mushrooms, brussels sprouts or onions and contribute to a healthy diet, especially in winter. In order to convert the carotene in the body into vitamin A, the organism needs fat, so carrots should always be prepared with some oil, butter or cream - even as raw food.
Too much cold makes carrots taste soapy
Carrot should always be kept cool, but not too cold, to preserve the fine sweet aroma of the root vegetables, as the press office did „German fruits and vegetables“ explained. Because if the storage temperature is too low, the carrots get a soapy instead of their usual, sweetish taste, which often feels unpleasant when ingested. The carotenoids, which are among the phytochemicals, are perceived by humans above all as color, fragrance or aroma substances and can develop a protective function for the health in the human body, are not destroyed by the storage temperature.
