Senior bread without crust in the market
Around 300 different types of bread are sold in Germany. It is divided into wholegrain, black or white bread. Now another "variety" is added: the "Seniorenbrot". It was developed by German researchers and has no hard crust.


Seniors often have pain while chewing
In no other country in the world are there so many different types of bread as in Germany. In this country bread is eaten for breakfast, at noon, for dinner or as a snack. But many older people find it increasingly difficult to eat bread, for example because of the dentures. They have problems chewing and swallowing the hard bark. This can lead to further health problems, as pain during chewing, in addition to heartburn and reduced taste perception may be a reason for loss of appetite in older people. However, regular food is important to the body and can boost the immune system. Health experts have therefore often advised in the past, if necessary, to remove the hard bark. This is no longer necessary in the future, because now a bread without crust was created.

Designed for the needs of older people
The Seniorenbrot without hard bark was developed by scientists of the college Fulda and is now for the first time at the bakery to acquire. As the news agency dpa reports, Joachim Schmitt, professor of food technology at Fulda University of Applied Sciences, and his doctoral student Katharina Fuckerer have dubbed their baked goods "Loewenbrot". It has been reported that it has a particularly rich formula that has been developed especially for the needs of older people. Schmitt reported that now a marketing company for the brown bread was founded. A local branch baker has added the "Loewenbrot" to his assortment.

Rich in ballast and minerals
"It does not happen every day in research that an innovative idea actually becomes a product that you can later buy in the store," explained the food technician. The bread is easy to eat with its soft crust especially for people with chewing and swallowing problems. In addition, the box bread is said to be particularly rich in ballast and minerals such as magnesium and calcium. It is said that the idea for the product originated in a retirement home, where bread rinds had to be left over again and thrown away. "In this combination of crustless but especially nutrient-rich bread, our project is unique in Germany," says Schmitt.

Growing market due to aging society
The bread (500 grams for 2.49 euros) was honored with the innovation prize in the Fulda trade. Currently it is delivered by the Fulda-based baker Storch in branches and nursing homes. In a next step, it will be marketed nationwide and sold to licensed bakers across the country. Schmitt explained that due to the aging society in Germany, an ever larger market for crustless Seniorenbrot arise. He claims to be working on the next innovative project, a vitamin snack especially for seniors. Last year, Antje Gahl, a nutritionist from the German Nutrition Society (DGE), told dpa how to make older people feel more like eating.
