"Elderberries need to be heated to over 80 degrees Celsius for a short time in order to neutralize the sambunigrin and other nonthreatening substances," explains Susanne Moritz, nutrition expert of the Bavarian consumer center in a statement.
Especially much of the toxin is found in immature fruits. That's why elderberries should not be harvested until they are fully matured. This can be recognized by the fact that red juice comes out and there are no more green spots inside.
