Healthy local vegetables
Especially in winter, the vitamin C intake is particularly important because of the frequent colds caused by the wet and cold weather. Winter vegetables, which are mainly on the table in northern Germany, have become a trend vegetable in recent years.

From classic to trendy vegetables
Traditionally kale or kale - as the healthy vegetables in the US is called - usually cooked with sausage, bacon or Kasseler. A classic dish is "Kale with Pinkel", to which a heavily smoked and seasoned pork sausage is often served.

But the cabbage can be not only hearty, but also easy and delicious to prepare. For example, in the form of a bright green kale sauce or as an exotic side dish.

In addition, the vegetables also taste like salad, with pasta, marinated or fried in oil. Even kale chips are now available.

The New York Times cooking blog lists more than 200 Kale dishes - cold and hot dishes as well as smoothies.

Healthy ingredients
Kale is rich in provitamin A, B vitamins, folic acid and vitamin E. Most importantly, it contains a lot of vitamin C - more than cabbage, red cabbage or savoy cabbage.

In addition, the cabbage contains healthy phytochemicals that have an antioxidant effect and can lower cholesterol levels.

Moreover, it has been scientifically proven that kale has anti-inflammatory effects and lowers the risk of cancer. According to a study by the University of Oldenburg and Jacobs University in Bremen, this cabbage contains significantly more cancer-preventive substances than other varieties.

Over 50 species available
Kale grows depending on the species with dark green, bluish or reddish brown, curly leaves that do not close to a head.

At the University of Oldenburg, a research group is working on kale research. "Over 50 different varieties of delicious cabbage are currently available on the market - and they differ not only in their leaf shape, but also in their ingredients, their taste and their growing conditions," it says on the college's website.

The leaves are edible after the first frost and especially tasty, because then a part of the contained starch was converted into sugar.

However, caution is advised in people who take blood thinners such as marcurmar, as kale contains high levels of vitamin K, which promotes blood clotting and thus counteract the remedies. For larger amounts (from 200 grams), therefore, the dosage of the drugs would be adjusted in advance to avoid possible life-threatening complications. This applies to all blood thinners based on so-called phenprocoumones. (Ad)
