Good news for all fish fans: Good smoked salmon can be very expensive, but also very cheap. This has an investigation of „Stiftung Warentest“ („test“-January 2015 issue). Twenty smoked salmon products were tested, 16 of which were farmed salmon and four were wild salmon.

Test winner from the discounter
According to a message from the dpa news agency, the testers paid special attention to the sensory quality, ie taste, smell and appearance. A smoked salmon should therefore not „fishy“ smell or taste and „buttery“ melt on the tongue. One of the cheapest products from the discounter was test winner. Although the breeding salmon from Lidl / Odin Seafoods only costs 1.65 euros per 100 grams, it was judged by the testers to be a smooth 1.0. As there was hardly anything else to complain about, the product was the only one to receive the final mark „very well“ (1.5).

From „very well“ to „inadequate“
At 16.80 euros per 100 grams, wild salmon was by far the most expensive. Although small quantities of dead nematodes are acceptable in wild salmon, the offending product was the „Stiftung Warentest“ significantly exceeded the limits set by the Panel on Animal Products (ALTS).

Consume smoked salmon quickly
The testers generally advise to consume smoked salmon quickly, because he is susceptible to germs. If possible, do not stock up and transport him home in a cooler. In the refrigerator, the temperature should not be above seven degrees and broken packs should be used up the next day at the latest. You should remove smoked salmon from the fridge about half an hour before consumption to develop its full aroma. Experts also point out that salmon can be part of a healthy diet. Although it has a much higher fat content compared to other fish species, this also means that it is a very good protein source.
