For vegetable oils, pay attention to the shelf life
Whether olive, rapeseed or walnut oil: consumers should buy cold-pressed oils only in small bottles. As Harald Seitz of the German Federal Center for Nutrition informs, they only last a few weeks - even if they are stored in a dark and cool place. Alternatively, it is recommended to have various oils in small quantities at home and to taste them, e.g. to use for roasting or for salads.

Selection of vegetable oils is immense
Oils are used almost constantly in the kitchen, be it for frying, marinating or for salads. The selection in the supermarket is huge and it is often difficult to keep track of all the bottles.

Many varieties can not be heated up
Which oil do I use for what? "It just depends on what I want to prepare with the oil. Of course, many oils have their own taste, and of course they have to match the particular dish, "explains nutritionist Harald Seitz from the German Federal Center for Nutrition in a radio report. In addition, many oils are not suitable for frying, but others are again very high heatable, the expert continued.

"Sharp searing of meat in the pan reaches temperatures of up to 200 degrees Celsius. And that can only be tolerated frying fat and some refined [...] vegetable oils. These include, for example, refined peanut, rapeseed, sunflower or olive oil, "informs Seitz. "For cold dishes with lots of flavor, such as antipasti or salads for example, cold-pressed oils are more exciting," continues the nutritionist. For these would be preserved by the low-heat processing more flavors and phytochemicals.

Cold pressed oils have only limited shelf life
Cold pressed oils, e.g. Olive, almond or walnut oil should not be bought in large bottles. Because the fat will last only a few weeks, even if it is stored dark and cool. For this reason, it is advisable to buy different oils in small quantities, so you can vary depending on your taste and application. (No)
