There are many possibilities and reasons for limiting animal milk consumption: health aspects as well as intolerances, for example in the form of lactose intolerance. „There is also evidence that eating milk and dairy products may increase the risk of developing various diseases“, explains Dr. Markus Keller, Director of the Institute for Alternative and Sustainable Nutrition. On the occasion of this year's World Milk Day on 1 June, the Vegetarian Federation of Germany presented some herbal alternatives to classic cow's milk.
Almond milk instead of cow's milk: alternatives to animal milk varieties
Soy milk is the best known vegetable milk variety. It is available in supermarkets and is used in cafes for cappuccino or latte macchiato. However, somewhat unknown are herbal dairy products made from almonds, coconuts or cereals. They usually contain less calcium than cow's milk, but lead to balanced nutrition but no follow-up problems: „Adequate calcium intake can also be ensured through regular consumption of calcium-rich plant foods such as sesame, nuts and almonds, kale and amaranth, as well as calcium-rich mineral waters and fortified plant extracts“, explains Keller.
The all vegetable alternatives such as animal milk varieties can be used for cooking and baking, according to the Vegetarian Federation Germany according to many consumers unclear. „The variety of herbal milk provides a healthy and varied alternative to animal milk, not just for people with intolerances or vegan people“, explains its CEO Sebastian Zösch. Soy Milk, Grain Milk, Almond Milk: The most popular milk alternative
Soy milk is the best known alternative to animal milk. It has a lot of protein, low fat and low cholesterol. Meanwhile, the milk alternative made from soybeans is available in a variety of flavors, including vanilla, chocolate or banana.
„Grain milk is made from fermented grain or flour“, explains the Vegetarian Federation Germany. Ingredients include rice, oats or spelled. Nutritional values are comparable to cow's milk in terms of vitamins and minerals, but not in terms of protein.
Almond milk is a healthy alternative that makes it easy to make it yourself. For this you have to swell almonds in boiling water, quench and then peel. Then the kernels are mashed with a blender. The result tastes slightly marzipan, but can be used as a milk substitute ideal.
Another alternative to animal milk is coconut milk. It is slightly fatty and therefore very creamy, but is usually used only for rice or sweets. Typical of coconut milk is the exotic-looking taste. (Lb)
