How kale becomes an exotic side dish
Thayarni Kanagaratnam is Restaurant Manager and Thomas Bühner's right-hand man in the three-star restaurant "La Vie" in Osnabrück. The Sri Lankan-born restaurateur, also simply called "Mrs. Ka", explains how kale turns into an exotic garnish: first the cabbage is removed from the stalk, washed and the leaves are cut into fine strips. Then add 100 grams of ghee or clarified butter in a wok, add three finely chopped shallots, a teaspoon of fennel seeds and half a teaspoon of coriander seeds. "Now add the kale, salt and stir well," explains Kanagaratnam. Then close the lid and simmer the cabbage on low heat for about five to ten minutes - in between stirring again and again.

And now comes the exotic Pepp in the delicious vegetables: a cup of fresh grated coconut, a little finely chopped ginger and add to taste red curry paste. "Cook the kale at a high heat until it softens and the moisture evaporates," says the cook. The vegetables fit in their opinion as a side dish very well with roast pork and poultry.
