Spinach season has begun
In Germany, the season for fresh spinach has started. As the news agency dpa reports, the first outdoor vegetables taste very tender and are thus suitable for all sorts of salads. Tasty spinach recipes can be found on the internet. In addition to the classic creamed spinach with fried eggs, the spring vegetables can be processed in green smoothies, quiches and pesto, for example, as the consumer information service aid explains. The experts also explain that spinach should be quenched quickly after boiling in ice water so that it keeps its green color. The vegetables are best blanched in a saucepan over a moderate heat until they collapse.
Exotic version with teriyaki sauce
When refined with salt, pepper, garlic or nutmeg and one to two tablespoons of natural yoghurt, the leaves taste particularly good. For those who like it exotic, try ginger, sesame seeds and the sweet and spicy Teriyaki Japanese spicy sauce. Fresh spinach is best stored in the fridge wrapped in a damp cloth. In this way he stays about two days. According to aid, spinach contains a lot of vitamin A, C, folic acid, potassium, calcium and magnesium. The iron content is said to have been overestimated for a long time but is still higher than that of lettuce.
Spinach is healthy
Overall, spinach is considered to be extremely healthy by nutritionists, but it should be consumed fresh, as the nitrate it contains is converted bacterially to nitrite and then to the carcinogenic nitrosamines over time. The emergence is favored when spinach is slowly cooled, stored at room temperature or reheated. Since spinach can also absorb many pollutants from the cultivation soil, experts generally recommend using organic spinach to minimize this risk. (Ad)
