Remove leaves but do not throw them away
Local kohlrabi has been available at the vegetable counters for some weeks. Consumers should immediately remove the kohlrabi leaves after shopping, as the leaves of the tuber deprive a lot of moisture. This reports the news agency dpa with reference to information of the Provincial Association of Rhenish fruit and vegetable farmers in Bonn. However, they do not have to be thrown away because the leaves are also edible. According to the well-known author and cooking expert Martina Kittler, the leaves contain even more nutrients than the tubers.
Kohlrabi is easily digestible
When buying, it is always important that the leaves are still on the vegetables. They show how fresh the kohlrabi is. They should always be green and not withered. The tubers can then be stored in the vegetable compartment of the refrigerator for about a week. If you wrap them in a damp cloth, this works even longer. Kohlrabi, unlike many other types of cabbage, are easily digested, according to Provincial Association experts. Kohlrabi with its sweet-spicy taste is suitable as a steamed vegetable garnish, but also tastes raw as a snack or in a salad.
