According to the Federal Center for Nutrition (BZfE), one serving of asparagus (500 grams) covers about 80 percent of the daily requirement for vitamins C and E. The vitamin C content of green asparagus is higher than white; the same applies to the folic acid content, reports the information service aid.

The low fat content and the good saturation properties make asparagus a valuable vegetable. The fiber promotes a healthy intestinal function and the protein component asparagine stimulates kidney activity.

Health experts, for example, recommend the most delicious vegetables for constipation, gallbladder and liver problems, diabetes or bladder problems. A disadvantage: Asparagus consumption leads to foul-smelling urine.

Regionality is a purchase argument
According to preliminary figures from the Federal Information Center for Agriculture (BZL), around 123,000 tonnes of asparagus were available for consumption by the Germans during the 2015/16 marketing year. The per capita consumption was therefore 1.5 kilograms - just as much as in the previous year.

The harvest time ends according to aid on 24 June. As a result of this limited availability, asparagus has its very own charm and corresponds to the wishes of consumers in terms of regionality: According to the nutrition report of the Federal Ministry of Food and Agriculture in 2017, 73 percent of buyers attach importance to regionally produced goods.
