Fry fish fillets fat-free on baking paper

Fish is generally considered to be healthy, but a too high-fat preparation can bring with it taste and health disadvantages. Therefore, fish fillets should be fried on baking paper as fat as possible, recommends Sandra Kess from the Fish Information Center (FIZ) in Hamburg to the news agency „dpa“.
At the International Green Week 2013, until Sunday last week, interested people could meet at the Fish Information Center stand by a chef „the fat-free frying on baking paper“ explain. As the fish fillet on baking paper in the pan succeeds well, the FIZ chef also performed live on site. With the easy-to-use method, the fish can brown without getting into contact with the fat. Before fat dripping fish fillets should therefore belong to the past.
Do not roast fish directly in the oven
Sandra Kess, responsible for public relations at FIZ, explained that the fish does not have to be directly in the oil to cook. A low-fat preparation is quite possible with the help of a cut piece of baking paper. So first a tablespoon of oil is heated in a pan and then put on a size of the pan adapted piece of baking paper. The oil acts only as a heat conductor and the unpeeled fish fillet can brown in its own fat. So the fish is sautéed from both sides, until the fillet is cooked. According to Kess, this method of preparation is well suited to fish species with solid meat and, depending on taste, with or without skin. As an example, the expert named Dorsch. For the low-fat roasting method, however, numerous fish recipes are available. Kess also emphasized that a pleasant side effect of this method of preparation is the avoidance of fish odor in the kitchen. (Fp)
