It quickly happened: The rolls from Sunday are hard, the bread is dry or moldy. If you want to avoid this, you do not need extensive knowledge about food storage. It is important to know about the differences in the types of bread and how to deal with which bread.
Basically, bread and rolls are best kept at room temperature. In the refrigerator you should not keep it in general. In particular, bread with rye flour will quickly stale at low temperatures. Only at high outside temperatures with high humidity is it recommended to store in the refrigerator to prevent mold.
If you like a crunchy crust, you should make sure that bread and bread can "breathe". Well suited for this are nets or paper, such as the "Bäckertüten". In the case of airtight packaging, in particular rolls are otherwise quickly softened. Also stoneware or ceramic pots are well suited, especially if they have no air holes or slots and the lid closes well. Packed bread is best left in its original packaging. In these you should also hit it as quickly as possible and close the packaging to prevent drying out. Incidentally, the higher the proportion of rye, meal or sourdough, the longer the bread will stay at room temperature and stay fresh and properly packaged.
If you have bought too much, you can also freeze fresh bread or fresh rolls - ideally in a well-closed freezer bag. At minus 18 degrees Celsius, they last up to three months. For consumption, simply remove the desired number of rolls, moisten with water and bake in a preheated oven in a few minutes crispy.
If it comes to the formation of mold, you should throw away all the bread, even if only a few mold marks or points are recognizable. Because the molds not only grow visibly on the surface, but also invisible inside. Among other things, their toxins can be damaging to the liver and kidneys. However, it is unlikely that the one-time consumption of a mildewed bread slice already makes you sick. It is best to only buy as much bread as you actually need. Even so, you prevent a possible mold growth.
