Quality is important when buying apple cider vinegar. It is important that the vinegar is made from whole organic apples from regional cultivation and not only from core casings and bowls. The apple cider vinegar should not be a so-called fruit vinegar, consisting of fruit mix, but really only consist of apples. An unheated, so not pasteurized vinegar is to be preferred. Even if the filtered, clear liquid is rather something for the eye, the natural cloud is recommended. The suspended substances contained therein are a quality feature. Of vinegars containing any additives, such as sulfur, should be avoided.
Recipe for making your own
Apple cider vinegar is relatively easy to make yourself. These will require organic apples, two tablespoons of sugar per pound of apples, a clean container (for example, a large preserving jar with a capacity of up to two liters), clean bottles and a clean cotton cloth.
The vessel must first be rinsed out very well, best sterilized in boiling water. There come in then apple pieces and the sugar. The whole is poured with water until everything is well covered. On top comes the clean cotton cloth. Now and then it is stirred and gently swung back and forth, so that no mold is created. When the fermentation starts, there is foam - that's what you want. After a few days, the smell changes, slowly a slight Essignote penetrates into the nose. The apples sink to the ground. It does not take two weeks to add sugar. Now strain it into a clean container through a cloth, cover it again with a cloth and allow to ferment again for about four to six weeks. Then the apple cider vinegar is ready and can be - filtered through a cloth or a fine sieve - filled in bottle.
Fermentation produces streaks that become jelly-like over time. This is the so-called vinegar nut, consisting of acetic acid bacteria. This does not have to be thrown away, but can contribute to faster development in the next apple cider vinegar approach.
